Mint and chocolate is one of those combinations I’ll never get tired of, and Air Fryer Mint Chocolate Brownies are the version that ruined all other mint chocolate desserts for me. Dense, fudgy brownie topped with a sweet fluffy peppermint buttercream and a dark chocolate drizzle. Every square is rich, cool, and completely beautiful.

I make these for weekend treats, parties, and holidays like Christmas and St. Patrick’s Day because that pale green frosting and chocolate drizzle look so festive with barely any effort. The air fryer gets them done faster than the oven, which is always a win. They travel well and hold up beautifully on a dessert table. Leftovers keep at room temperature for up to 3 days or in the fridge for up to a week.

How to Make Air Fryer Mint Chocolate Brownies with Step-By-Step Instructions

Here’s exactly how I make these air fryer brownies from start to frosted finish.

Prep the Air Fryer and the Pan

Preheat your air fryer to 320°F (160°C) so it’s nice and ready. Grease and line a 7×7-inch baking pan or one that fits inside your air fryer basket with parchment paper, leaving a bit of overhang on the sides so you can easily lift the mint brownies out later.

I use a square baking pan that’s air fryer-safe, heats evenly, and has a nonstick coating, which basically means I can skip the parchment, but I just don’t and still use it for easy removal of the brownies once they’re done.

Mix the Brownie Batter

In a large mixing bowl or a batter bowl, mix sugar and melted butter with a hand mixer until well combined. Add the eggs and vanilla extract, then whisk again until smooth.

Now, sift in the cocoa powder, all-purpose flour, salt, and baking powder. Then, with a silicone spatula, fold everything gently until just combined. This is key to getting those perfectly fudgy brownies, so don’t overmix, or you’ll end up with tough ones.

Air-Fry and Cool Completely

Pour the homemade brownie batter onto the prepared pan and spread it evenly with the spatula. Air-fry for 20 to 25 minutes, checking for doneness with a toothpick. The toothpick should come out with a few moist crumbs, not with wet batter, or totally clean.

Remove brownies from the air fryer and let them cool completely before frosting and slicing. You can also transfer them to a cooling rack to speed up cooling after a few minutes in the pan. Warm brownies will cause the frosting to melt and slide right off, which isn’t exactly what we want here.

Make the Mint Frosting

While the brownies cool, prepare the creamy mint frosting. Beat the softened butter in another bowl until creamy, then gradually add the powdered sugar, mixing until smooth. Add the milk and peppermint extract.

Beat until light and fluffy, then add green food coloring, if you’re using it. Just add one drop at a time so you can easily control how dark or light your frosting turns out. It’s easier to intensify a lighter shade than to tone it down if it gets too vibrant.

Frost and Top the Brownies

Spread the mint frosting evenly over the cooled brownies with an offset spatula. Then, sprinkle with chocolate chips or drizzle with melted chocolate if desired. Cut evenly into squares with a sharp knife, then serve and enjoy!

Rich, fudgy brownies come out of the air fryer with deep cocoa flavor, and once you layer on the fluffy peppermint buttercream and finish with a dark chocolate drizzle, every square looks absolutely gorgeous. I make these for weekend treats, parties, and holidays like Christmas and St. Patrick's Day. They slice cleanly, hold up beautifully, and disappear fast every single time.

  • 1 cup granulated sugar
  • ½ cup unsalted butter melted
  • 2 large eggs

Here are my best tips for making Air Fryer Mint Chocolate Brownies turn out perfectly every time.
Fold the dry ingredients gently: Once you sift in the cocoa, flour, salt, and baking powder, switch to a spatula and fold until just combined. Overmixing develops gluten and produces a cakey, tough brownie instead of a fudgy one.
Check for doneness early: Start checking at the 20-minute mark by inserting a toothpick into the center. You want a few moist crumbs clinging to it, not a clean toothpick, which signals the brownies are overbaked.
Cool completely before frosting: Patience here makes a real difference. Frosting warm brownies will cause the butter-based mint frosting to melt and slide off. Wait until the brownies are fully cooled to room temperature before spreading the frosting.
Beat the butter well before adding sugar: For the smoothest, fluffiest mint frosting, beat the softened butter on its own until it is creamy before gradually adding the powdered sugar. This prevents a lumpy or grainy frosting.
Add food coloring a little at a time: If you are using green food coloring, add it one drop at a time and mix thoroughly between additions so you can control the shade, from a soft pastel mint green to a deeper, more vibrant color.
Store properly: Keep cooled brownies in a single layer in an airtight container at room temp for up to 3 days, or stack them with parchment between layers. If your kitchen is warm, refrigerate for up to a week, or freeze them individually wrapped or after flash-freezing for up to 3 months.

How to Store Leftovers

Leftover brownies keep well at room temperature in an airtight container for up to 3 days, or in the fridge for up to a week. Let refrigerated squares come to room temperature before serving so the frosting softens back up, and the brownie texture is at its best.

For longer storage, wrap individual squares tightly in plastic wrap or aluminum foil, or flash-freeze them first in a single layer on a heavy-duty freezer-safe sheet pan for about 1 hour, so they don’t stick together, and you can grab only what you need.

Once they’re frozen solid, transfer them to a freezer bag or container for up to 3 months. Thaw overnight in the fridge or let them sit at room temperature for about 30 minutes before serving.

What to Serve With Air Fryer Mint Chocolate Brownies

A scoop of vanilla ice cream alongside one of these fudgy squares is a classic pairing that never gets old. The contrast between the cold ice cream and the cool mint frosting is really something.

A drizzle of hot fudge or chocolate sauce leans into the chocolate even further, while fresh raspberries or strawberries add a bright, fruity contrast that cuts through the richness beautifully. Semi-sweet chocolate chips or chopped walnuts also add a nice finishing touch as toppings.
