Air Fryer Mint Chocolate Brownies are my favorite brownie to make when I want something that feels a little festive and completely over-the-top delicious. Rich, fudgy brownies come out of the air fryer with deep cocoa flavor, and once you layer on the fluffy peppermint buttercream and finish with a dark chocolate drizzle, every square looks absolutely gorgeous. I make these for weekend treats, parties, and holidays like Christmas and St. Patrick's Day. They slice cleanly, hold up beautifully, and disappear fast every single time.

Ingredients
 
 

  • 1 cup granulated sugar
  • ½ cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder

Mint Frosting:

  • ½ cup unsalted butter softened
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon peppermint extract
  • Green food coloring optional
  • Chocolate chips for topping

Instructions
 

  • Preheat the air fryer to 320°F (160°C).
  • In a large bowl, whisk together the melted butter and granulated sugar until well combined. Add the eggs and vanilla extract and mix until smooth.

  • Sift in the cocoa powder, all-purpose flour, salt, and baking powder. Fold gently until just combined. Do not overmix to keep the brownies fudgy.

  • Grease a 7 × 7-inch pan that fits inside the air fryer basket. Pour in the brownie batter and spread evenly.
  • Air fry for 20 to 25 minutes, checking doneness with a toothpick. The toothpick should come out with a few moist crumbs.
  • Cool completely before frosting and slicing.
  • While the brownies cool, prepare the mint frosting. Beat the softened butter until creamy. Gradually add the powdered sugar and mix until smooth.
