Let’s walk through each step so your casserole dish comes out golden, perfectly cooked, and absolutely delicious.
Cook the Bacon and Sausage
Start by lightly greasing your baking dish and setting it aside. Add the chopped bacon and uncooked sausage to a large skillet over medium heat and cook until everything is browned and fully cooked through. Drain off the excess grease so the casserole doesn’t turn out greasy at the bottom.
A good cast-iron skillet like this one makes this step fast and easy because it holds heat evenly and cleans up well.
Whisk the Eggs and Cottage Cheese
Grab a large mixing bowl and whisk the eggs and cottage cheese together until fully blended with no large curds remaining. A balloon whisk is perfect here because it helps break down the cottage cheese into the eggs, giving the casserole a creamy, custard-like texture once it bakes. Don’t skip this step, as proper whisking is key to a smooth mixture.
Combine All Ingredients
Add the cooked bacon and sausage, frozen shredded hash browns, cheddar cheese, 1 ¾ cups of the Swiss cheese, garlic powder, paprika, and a little salt and pepper to the egg mixture in the bowl.
Stir everything with this large silicone spatula, which is heat-safe and flexible, perfect for folding and mixing the hash browns straight from frozen, with no thawing needed.

Fill the Baking Dish and Top With Cheese
Pour the mixture into your prepared baking dish that fits inside your air fryer and smooth the top into an even layer. Sprinkle the remaining quarter cup of Swiss cheese over the top so it gets golden and slightly crispy as it bakes.
I love using this 9×13 baking dish because it fits perfectly in my air fryer basket, lets me spread the mixture evenly, and helps the cheese on top get beautifully golden and crispy every time.
Air Fry Until Golden and Set
Evenly place the dish in the air fryer and bake at 350°F for 30 to 35 minutes. The baking time should be enough for the center to be fully set with no jiggling when you gently shake the dish, and for the top to turn golden.
If yours starts browning too quickly before the center sets, lay a small piece of foil loosely over the top. A reliable digital instant-read thermometer can confirm it’s done when the center reads around 160°F.

Cool Slightly Before Slicing
Let the casserole cool completely for a few minutes before cutting into it. Slicing too early means it’ll fall apart on the plate. This sharp serrated knife gives you clean slices without dragging through the egg layer. Serve warm straight from the dish and enjoy!

Air Fryer Amish Breakfast Casserole

- 2 cups cheddar cheese shredded
- 2 cups Swiss cheese shredded
- ½ teaspoon garlic powder
- ½ teaspoon paprika powder
- Salt and pepper
Instructions

- Stir in the cooked bacon and sausage, hash browns, cheddar cheese, 1 ¾ cups of the Swiss cheese, garlic powder, paprika, and a pinch of salt and pepper. Mix until evenly combined.4 cups frozen shredded hash brown potatoes, 2 cups Swiss cheese, ½ teaspoon garlic powder, ½ teaspoon paprika powder, Salt and pepper
- Pour the mixture into the prepared baking dish that fits your air fryer and smooth the top. Sprinkle the remaining ¼ cup of Swiss cheese over the top.
- Bake in the air fryer at 350°F (180°C) for 30 to 35 minutes, or until the casserole is set in the center and golden on top.
- Let cool slightly before slicing. Serve warm for a hearty, crowd-pleasing breakfast.
Notes
- Check your dish size first: Make sure your baking dish fits inside the air fryer basket before filling it. Measure first, since not every 9×13 fits every fryer.
- Drain the meat well: After cooking the bacon and sausage, drain all the grease before adding the meat to the eggs. Leftover grease can make the casserole greasy and prevent the center from setting properly.
- Don’t thaw the hash browns: Use the frozen shredded hash browns straight from the bag. Keeping them frozen helps them stay firm and textured as they bake, preventing mushiness.
- Whisk the cottage cheese fully: Take an extra minute to really whisk the eggs and cottage cheese together until smooth. Breaking down the curds before baking gives you a creamier, more even texture throughout the casserole.
- Tent with foil if needed: Whisk the eggs and cottage cheese thoroughly until smooth. Breaking down the curds first ensures a creamier, more even casserole.
- Flash freeze for easy portions: If freezing leftovers, slice the casserole and place the pieces on a baking sheet for about an hour, then transfer to a freezer bag or container. The slices won’t stick and are easy to grab individually.

How to Store Leftovers
Allow any leftover casserole to cool to room temperature before storing. You can cover the whole dish tightly with plastic wrap or portion it into airtight containers. I like using these glass containers with locking lids since they keep food sealed and won’t pick up any fridge smells.
Another option is to wrap the entire casserole in BPA-free plastic wrap, which keeps it fresh in the refrigerator for 3–4 days. Reheat individual slices in the microwave for a quick breakfast, or warm the whole casserole in the oven until heated through.
For longer storage, the casserole freezes well for up to two months. Wrap individual slices in plastic wrap or a heavy-duty foil, then place them in a souper cube container so they’re portioned and easy to grab. Simply thaw overnight in the fridge and reheat; the casserole stays firm and never turns watery.
What to Serve With Air Fryer Amish Breakfast Casserole
It’s filling on its own, but pairs really well with something light on the side to balance out all that richness. Fresh fruit, a simple green salad, or sliced sun-dried tomatoes work well, and a dash of hot sauce adds a nice kick if you like a little heat. Buttered toast or warm biscuits alongside it make for a complete hearty breakfast spread that works for a crowd.
If you’re serving it for brunch, add a pitcher of orange juice, a pot of coffee, and maybe a stack of pancakes or waffles on the side for guests who want something sweet to go with the savory. It’s the centerpiece, so everything else can be simple and easy.
