I make these every Easter and honestly any time I’m hosting a dinner where I want the main course to do the talking. The air fryer finishes them faster than the oven and gives consistently great results, so there’s no stressing over doneness while guests are at the table. Leftovers keep covered in the fridge for up to 3 days and reheat gently so they stay juicy.

How to Make Air Fryer Lamb Loin Chops with Step-By-Step Instructions

Whether you’re working with loin lamb chops or rib chops, this method works beautifully for either cut. If you have marinated lamb chops ready to go, you can skip the seasoning step and head straight to the sear.

Preheat the Air Fryer

Set your air fryer to 390°F (200°C) and let it preheat for 3 to 5 minutes. I use my basket-style air fryer for this recipe because it heats up quickly and evenly every time.

Preheating is worth the few extra minutes because it helps you get that nice sear right from the start.

Rest and Season the Lamb

Take your lamb loin chops out of the fridge and let them sit at room temperature for 20 minutes before cooking. Once they’ve rested, pat them dry with paper towels, then season generously with salt and pepper on both sides. Patting them dry with reusable Swedish dishcloths is what helps you get that gorgeous crust rather than steamed meat.

You can mix your seasonings in a small bowl first if you want to add garlic powder, onion powder, or dried thyme alongside the salt and pepper for a more layered flavor. A splash of lemon juice or red wine vinegar in a quick marinade also works well if you have a little extra time.

Sear the Chops (Optional but Recommended)

For extra depth of flavor, heat a skillet over high heat and add the olive oil. A cast-iron skillet is my go-to here because it holds heat beautifully and gives you an even sear every time.

Avocado oil is a great swap here if you prefer a higher-smoke-point oil. Sear the lamb chops for 2 to 3 minutes per side until you get a nice golden crust.

Air Fry the Lamb Chops

Place the seasoned lamb chops in the air fryer basket in a single layer and cook at 390°F for 6 to 7 minutes for medium doneness. If you’re working with lamb shoulder chops or thinner chops instead of loin chops, check for doneness a minute or two earlier, since they can cook faster.

Air fry the lamb chops for 6 to 7 minutes, flipping halfway through, then add the garlic, rosemary sprigs, and butter on top.

Flipping halfway through the cook time helps both sides brown evenly, and using a meat thermometer like this one to check the internal temperature takes the guesswork out entirely. For medium rare, you’re looking for an internal temperature of around 135°F.

Add the Garlic Butter Finish

Once the initial cook time is up, add the minced garlic, rosemary sprigs, and butter on top of each chop right in the basket. Fresh garlic gives the best flavor here, though dried herbs like dried thyme work just as well if that’s what you have on hand.

Cook for another 2 minutes until the butter has fully melted and the garlic smells fragrant.

Serve

Remove the lamb chops from the air fryer and let them rest for 5 minutes before plating. A squeeze of fresh lemon over the top right before serving brightens everything up beautifully.

Spoon any melted butter and juices from the basket generously over the top before serving and enjoy!

If you’re bringing these to a dinner or gathering, let the chops rest and cool slightly before packing. Place them in a deep, lidded container to keep the garlic butter and juices contained. Tuck the container into an insulated casserole bag to hold the heat, and aim to serve them within an hour of cooking for the best texture and flavor.

Notes

Here are a few things I’ve learned from making these lamb chops more times than I can count.
  • Let the lamb come to room temperature: Take the chops out of the fridge a full 20 minutes before cooking so they cook more evenly from edge to center.
  • Pat them completely dry: Moisture on the surface works against a good crust, so use paper towels and press down firmly before seasoning.
  • Don’t skip the sear: The optional skillet sear before air frying adds a layer of flavor and texture you simply can’t replicate with air frying alone.
  • Arrange in a single layer: Overlapping chops trap steam and prevent even cooking, so work in batches if your air fryer basket is on the smaller side.
  • Add the butter and garlic at the right time: Drop them in only for the last 2 minutes of cooking so the garlic becomes fragrant without burning.
  • Freeze them individually: Wrap each cooked chop in plastic wrap before placing them in a freezer-safe container so they don’t stick together and are easy to grab one at a time.

How to Store Leftovers

Let the lamb chops cool completely before storing. Transfer them to an airtight container and refrigerate for up to 3 days. I keep a set of airtight glass containers on hand specifically for meat leftovers because they seal tightly and don’t hold onto odors.

To freeze, wrap each chop individually in plastic wrap, then place them in a freezer-safe bag or container for up to 2 months. Thaw overnight in the fridge, then reheat gently in the air fryer at 300°F for a few minutes until warmed through without drying out.

Use a meat thermometer to check that they’ve reached 130°F to 135°F internally, and add a few fresh herbs over the top when plating to freshen up the dish.

What to Serve With Air Fryer Lamb Loin Chops

Lamb pairs beautifully with side dishes that complement its richness without overwhelming it. Creamy mashed potatoes or roasted garlic potatoes are a natural match and soak up all that rosemary butter sauce. A simple arugula salad with a lemon vinaigrette adds a bright contrast to the richness of the meat.
