Crispy golden chicken thighs, tender roasted potatoes, colorful sweet bell peppers, fresh asparagus, and caramelized red onion are all packed with bright lemon, balsamic vinegar, paprika, oregano, and garlic in every single bite.   • Juice of 1 lemon
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 –6 chicken thighs
  • 1 red onion cut into 1-inch wedges
  • 1 red bell pepper sliced into 1-inch strips
  • 1 green bell pepper sliced into 1-inch strips
  • 1 bunch asparagus trimmed
  • 1 pound potatoes diced into ¾-inch cubes
  • 1 lemon sliced (for garnish)

Instructions
 

  • Preheat the oven to 425°F (220°C) and line a large sheet pan with foil or parchment paper.
  • Pat the chicken thighs dry with paper towels to help achieve crispy skin.
  • In a large bowl, whisk together olive oil, lemon juice, balsamic vinegar, thyme, oregano, paprika, garlic powder, salt, and pepper.
