Grilled Pineapple

Mandy Applegate
Grilled Pineapple is one of those recipes that turns a few basic ingredients into something surprisingly bold and satisfying. It’s quick to prep, easy to throw on the grill, and works for all kinds of occasions—from summer cookouts to casual family dinners. You can marinate the slices ahead of time and keep them chilled for a few days, or freeze them if you want them to last longer, though they’re hard to beat fresh and warm. Whether you serve it as a side, dessert, or topping, it fits right in without any fuss.

Ingredients

  • 10 pineapple slices cored and sliced into rings at ¾ inch
  • 3 tablespoons brown sugar
  • 2 tablespoons dark rum
  • 1 tablespoon flaky sea salt
  • Mint leaves to serve

Instructions

  • Preheat your grill to medium-high and make sure the grates are clean and lightly oiled.
  • Rub the pineapple rings with brown sugar and a splash of dark rum. Let them sit for about 10 minutes to absorb the flavor. Allow any excess marinade to drip off and reserve it for serving.

Notes

  • Use Fresh Pineapple: Canned pineapple can get too soft on the grill—fresh slices hold their shape and taste brighter.
  • Slice into Even Thickness: Cut all your pineapple rings to about the same thickness so they grill evenly and don’t burn or stay raw in the center.
  • Try Other Sweetener: Swap in honey, agave, or maple syrup for brown sugar for a lighter, floral sweetness that still caramelizes well on the grill.
  • Add a Citrus Kick: Mix in a splash of orange or lime juice with the rum and sugar to brighten the flavor and balance the sweetness.
  • Spice It Up: Mix in a pinch of spices like cayenne pepper, chili powder, or even ground cinnamon with the sugar and rum for a sweet heat that plays perfectly with the smoky char.
  • Let It Soak: Give the brown sugar and rum a few minutes to sit on the fruit. It helps break it down slightly and boosts the caramelization.
  • Oil the Grates: A light oiling with cooking spray keeps the fruit from sticking and helps you get clean, defined grill marks.
  • Add Salt After Grilling: A sprinkle of sea salt after grilling brings out the sweetness and balances the flavor.
